I picked up this great alternative to devilled eggs from my brother. You have to like avocados to enjoy this!

- 4 eggs
- 2 avocados - peeled, stone removed and mashed
- small handful chopped fresh coriander
- 1 spring onion, minced
- 1/2 small green chilli, seeded and minced
- 1 dessertspoon fresh lime juice
- 1/2 teaspoon salt, or to taste
- 1 teaspoon Dijon mustard
- 1 pinch paprika

- Place eggs in a saucepan and cover with cold water. Bring water to the boil and immediately remove from heat. Cover, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool and peel. Slice eggs in half, and carefully remove yolks to a mixing bowl.
- In the bowl with the yolks, combine the avocado, coriander, spring onion and green chilli. Stir in the lime juice, and season with salt and mustard. Mix well, and spoon into empty egg white halves. Sprinkle with paprika just before serving.

I love avacados but two seemed a little much for only four eggs, therefore, I only used one. They turned out great and everyone loved them!-17 Aug 2002
This is a very good alternative to regular deviled eggs BUT the guacamole turned very dark when I put it in the eggs the night before I was going to serve them so next time I will wait until the last minute to add it to the eggs. Very tasty though.-05 Jul 2002
These were great. My family LOVES avocados so I followed the recipe as is. Once my mom tasted one she just kept stuffing them into her mouth and told everyone else that they didn't taste good. This is a great recipe if you want a change from a basic deviled egg.-16 Jul 2003
Guacamole Deviled Eggs
Not only are Guacamole Deviled Eggs much tastier than the average deviled egg, but they're healthier, too! Using minimal egg yolks, these party appetizers are packed with heart healthy avocado instead.

If you're like me, any time you hear someone say, "guac is extra," you don't even hesitate before responding, "cool, I'll take it anyway." Because, in my mind, there is no price too high for a bowl of fresh guacamole. Or even one of those little plastic containers full of guacamole that they give you when you order a burrito. And then I'd be all, "you're right guac is extra if by extra you mean that it's totally over the top and excessive and the most amazing ever." Because I'm pretty sure teenagers have given the word "extra" a totally new meaning these days (luckily, I'm still semi-cool enough to keep up with the new lingo).
Anyway, when it comes to deviled eggs, guacamole makes them extra healthy. In honor of National Family Meals Month&trade in September, Eggland's Best has teamed up with the American Health Association to help educate families on the importance of spending time together and eating healthy and nutritious meals. They're also sharing some Healthy for Good recipes, like this one for guacamole deviled eggs. In this recipe, most of the egg yolks are replaced by guacamole, which makes them healthier than your average deviled eggs! And if you ask me, the best meals are meals that start with a fun little appetizer.

Here’s how you make guacamole deviled eggs!
You start with a bunch of eggs, which you are going to hard boil according to your favorite method.
Personally, I just ask this character to make me some hard boiled eggs.
He has a secret method that makes them come out perfectly and easy to peel every single time, and one day he will will do a guest post on this here blog and let us all in on it.
Anyway, once you have your hardboiled eggs and they are nice and chilled, peel them every so carefully. We want every bit of the egg white intact so we have a nice guacamole holder.
Cut the eggs in half lengthwise and carefully pop the yolk out of each of them.
Next, mash up an avocado with a fork or a potato masher. Add the egg yolks and mash again. (Mashing is an excellent way to work out any stress we may be experiencing lately!)
Now stir in the juice from one lime and a little salt and mash again. You can make your guacamole filling as smooth or chunky as you like – I personally like mine smooth, because I like to take this opportunity to use my handy pastry bag set to fill the eggs up with the filling.
However, it is 100% fine if you want to spoon it in. One way or the other sprinkle your guacamole deviled eggs with some chili powder and lime zest.
I am seriously considering serving these and only these to the Southern husband for dinner next week…because these days, I feel like all the regular supper guidelines have been seriously relaxed.

HOW TO MAKE GUACAMOLE DEVILED EGGS
Now that you have your chunks of avocado, you’re ready add your Fresh Success Guacamole Seasoning Mix.
If you bought already peeled boiled eggs at the grocery store, you can go ahead and make your guacamole deviled eggs following the steps below. This makes it a really fast and easy BBQ side dish. If you are boiling your own eggs, we will include those steps at the end.
- Slice the boiled eggs in half vertically, so you have two equal long halves for each egg.
- Gently pull out the egg yolks. You can toss them, but I save them for mixing into tuna or potato salad.
- Now add a scoop of guacamole to the well of all the boiled egg whites.
- Thinly slice some cherry tomatoes and add slice to the center of each dollop of guacamole.
You can now serve your guacamole deviled eggs right away, or refrigerate them to serve within 4-6 hours.
HOW TO BOIL EGGS
We have a whole post on how to make perfect hard boiled eggs, but here are the basics.
- Place your eggs in a saucepan and cover with cold water.
- Turn the heat to high and watch carefully for when the water starts to boil.
- As soon as the water begins to boil, keep the lid on the pot and remove from heat. I just set it on another burner that’s off.
- Set a timer for 10 minutes.
- When the timer goes off, place the eggs in a small bowl and run them under very cold water. You can also place them in a bowl of ice water. This step causes steam inside the shell and makes the eggs easier to peel.
- Let your eggs cool completely, then peel and follow the steps above for making your guacamole deviled eggs.
While you can easily hard cook the eggs several days ahead, the make-ahead issue is with the guacamole. Avocados quickly brown when exposed to air.
If you need to make ahead, make the filling (you'll need to hard cook and cut the eggs to get the egg yolks for the filling), and store the filling in the refrigerator in a freezer bag with all air squeezed out. The filling will last a day or two without browning, stored this way.
When getting ready to serve, cut out a corner of the freezer bag and pipe the filling into the egg white halves.
If you've already made your guacamole deviled eggs and need to store them for more than an hour, cover with plastic wrap and make sure that all surfaces of the filling are touching the plastic wrap and not exposed to air.
How to make Devilled Eggs:
- Hard boil your eggs and let them cool completely in an ice water bath before making guacamole devilled eggs.
- You can boil your eggs the day before making the guacamole devilled eggs, just make sure to peel them before refrigerating as they do peel easier when it&rsquos done right after they cool.
- You can just mash the filling with a fork or a potato masher, but I like to use an electric mixer to whip the filling (before adding the tomato, jalapeño, and cilantro) so it&rsquos completely smooth. If you want the filling a little chunkier though, just use a fork.
- This recipe can easily be doubled if you want to make a large batch of guacamole devilled eggs.

Guacamole Deviled Eggs
Guacamole Deviled Eggs are the easy appetizer recipe I didn’t know I was missing! Like every other person in America, January has me trying to make up for my past sins in December. All that sugar and cheese, and cheese and sugar, it was good while it lasted but now it’s back to reality and the gym. We’re big football fans in this house and love watching the games with a snack or two (or 5)!
I started to brainstorm some yummy snacks for us and started with what we both love. I can’t live with out guacamole. It’s a must for me when I’m watching the game, my favorite is Garden Fresh Guacamole. On it’s own it’s not bad but I will dip chip after chip in the amazing stuff and that’s where I run into trouble! My husbands go-to, favorite appetizer is deviled eggs! He loves them all, especially Bacon Jalapeno Deviled Eggs! So I sort of did a mash up of these two and Guacamole Deviled Eggs were born!
They’re so simple to make and would be the perfect party appetizer! You can do so much ahead of time! We left out the mayo that’s traditionally in a deviled egg because we had the avocado in there. It tasted just like my favorite dip and I didn’t need the chips because of the little egg cup. They’re great for portion control too! The guacamole is all dished out into each little egg so I don’t have to worry about mindlessly eating the entire bowl of guac! I will be making these for a Super Bowl appetizer and then again probably for both St. Patrick’s Day and Easter. I’m in love, I’m in love, I’m in love.
How to make Guacamole Stuffed Deviled Eggs
I'm not even sure this is a full-fledge recipe, but it's definitely a tasty idea that is very easy to do.
- Make hard-boiled eggs. Or buy them! Check out How to Make the Perfect Hard Boil Eggs by Simply Recipes if you need tips for making them. Cut them in half and remove the yolks. You can also hard boil eggs in an air fryer.
- Make One Avocado Guacamole. Or buy some! Mix 1-2 yolks into the dip for a protein boost or use them for another purpose.
- Fill each egg half with guacamole.
- Enjoy right away!
Guacamole Deviled Eggs Recipe
I've combined two of my favorite recipes—guacamole and deviled eggs—into one devilishly good breakfast, appetizer or side dish. If you have some leftover guac-deviled egg paste, enjoy it with crackers, on toast or as a dip for veggies.
Peel the eggs, cut them in half lengthwise and scoop yolks into a medium bowl.
Add avocado to the egg yolks and mash together with a fork. Then stir in tomato, garlic, red onion, cilantro, hemp seeds, lime juice, cayenne and sea salt. Carefully spoon the mixture into each egg-white half. Sprinkle with additional cayenne or paprika.
